BOZEMAN — Purple, green, and gold. Those three colors are everywhere during the Mardi Gras season in southern states, but they are becoming more popular in Bozeman.
“I’m kind of fascinated by the amount of people that come for Mardi Gras here. It’s getting crazy. A lot of people are starting to celebrate it, said Kevin Carloss, the owner of Cafe ”
Carloss owns Cafe Zydeco, a Louisiana-style restaurant in Bozeman.
“It’s authentic. I’m from I'berville and learned from my mother, who learned from her mother. It’s good food, and I eat it every day," he explained.
And while Kevin can’t make the trip down to Louisiana for Mardi Gras, he enjoys bringing it to his restaurant.
“Well it brings it back. You know, I used to go to Mardi Gras all the time. I loved it," Carlos said.
If you’re going to celebrate Mardi Gras in true Louisiana fashion, you got to know what one phrase means- Laissez les bon temps rouler meaning let the good times roll.
It wouldn’t be Mardi Gras without king cake, and one Bozeman baker decided to trade in her wedding cake recipes for the king cake.
“Roll it out, and we make a cinnamon brown sugar filling that we fill into it. Fold it over, then cut it into long strips and braid it and then make a ring,” explained Jennifer Regester.
Regester uses her baking to give people a small sense of the holiday.
“We have a lot of clients that are from the Louisiana area and have contacted us and wanted us to make a traditional king cake for them because they miss home,” she explained.
Even though Tuesday is Mardi Gras, Jennifer expects to make more king cakes throughout this week.
“This year, we’ve made about six, and we have a couple more this week. So ,it’ll probably be about 12,” she said.
